Study: Vegetarian diets HEALTHIER IN EVERY WAY than diets with meat

Vegetarian diets are not just better for weight management, they are more nutritious than diets that include meat, according to a new study in the Journal of the American Dietetic Association. With two out of three Americans needing to lose weight, the message is more urgent than ever.

The new findings are based on a study including 13,292 participants in the National Health and Nutrition Examination Survey. Not only were vegetarians slimmer than their meat-eating counterparts, their fiber intake was 24 percent higher and calcium intake was 17 percent higher. Vegetarians also consumed more magnesium, potassium, iron, thiamin, riboflavin, folate, and vitamins A, C, and E, and less total fat, saturated fat, and cholesterol.

The study was accompanied by an editorial concluding that “the benefits of following a plant-based diet can be valuable beyond weight loss goals.” Specifically, the editorial noted, vegetarians have lower cholesterol levels, lower blood pressure, and “lower risk for many disease states including heart disease, diabetes, cancer, and hypertension.”

Meet Molly

Molly is a gray speckled pony who was abandoned by her owners when Hurricane Katrina hit southern Louisiana. She spent weeks on her own before finally being rescued and taken to a farm where abandoned animals were stockpiled. While there, she was attacked by a pit bull terrier and almost died. Her gnawed right front leg became infected, and her vet went to LSU for help, but LSU was overwhelmed, and this pony was a welfare case. You know how that goes.

But after surgeon Rustin Moore met Molly, he changed his mind. He saw how the pony was careful to lie down on different sides so she didn't seem to get sores, and how she allowed people to handle her. She protected her injured leg. She constantly shifted her weight and didn't overload her good leg. She was a smart pony with a serious survival ethic.

Moore agreed to remove her leg below the knee,and a temporary artificial limb was built. Molly walked out of the clinic and her story really begins there.

'This was the right horse and the right owner,' Moore insists. Molly happened to be a one-in-a-million patient. She's tough as nails, but sweet, and she was willing to cope with pain. She made it obvious she understood that she was in trouble. The other important factor, according to Moore , is having a truly committed and compliant owner who is dedicated to providing the daily care required over the lifetime of the horse.

Happiness Begins with Veggies!

If there was an eating style that made you happy, would you do it?

What if that same eating style helped keep your weight in the healthy range?  And reduced your risk of breast, bladder, and other cancers?  Would you then?

I’m even charged thinking that my risk of other diseases, like heart disease and diabetes that runs in my family, is lower with this eating style.

What if this eating style was really quite simple to follow, with no deprivation aspect, and fills you to satisfaction every single meal?  And is environmentally friendly?  Would you then?

So what is it?

Vegetarians have been studied extensively and recently, studies reveal that a vegetarian lifestyle is healthier overall.  In Nutrition Journal, vegetarians had less depression, anxiety and stress and overall, better moods than meat-eaters in the U.S.  The reason?  Vegetarians eat less animal-based essential fatty acids and more omega-3 from plants.  Sign me up!

People with diabetes have a higher incidence of colon, liver, pancreatic, and endometrial cancers.  The American Diabetes Association and American Cancer Society suggest more whole grains, fruits and vegetables and less red and processed meats which reduces the risk.

Stuffed Peppers Yummy

Stuffed Peppers yummy!

4 large green peppers
1 medium onion, chopped
2 cloves of garlic, crushed
4 ozs (112g) long-grain rice, cooked
8 ozs (225g) tomatoes, chopped
2 sprigs of parsley, chopped finely
4 ozs vegan cheese, grated
2 ozs (56g) butter
1 tablespoon olive oil
Salt and pepper
Cut a slice off the top of each pepper, remove centre core and seeds.
Brush each pepper on the outside with the olive oil and then stand the peppers upright in an ovenproof dish.
Melt the butter in a saucepan and fry the chopped onion gently. Add the tomatoes, rice, parsley, salt and pepper and combine.
Pile the mixture into the pepper shells.
Top each pepper with grated cheese.
Bake for 30-40 minutes in a pre-heated oven at Gas Mark 4 (350°F/180°C) until the peppers are tender. Serve hot.
